Mushroom stew:
- 250 g mushrooms
- 250 g cooked chickpeas
- 1 piece of red onion
- 2 cloves of garlic
- salt, pepper
- 1 pc red pepper
As an option, if seasonal:
- 1 piece of bell pepper
- 1 piece of tomato
Serving:
- 125 g millet (dry)
- about 3.5 dl of water
- salt, pepper
- 1-2 tsp natural vegetable yogurt (optional)
Irány a konyha!

1. Rinse the millet, then put it to boil in about three times the amount of water. Season with salt and pepper and cook covered for 15 minutes, then let rest.
2. Dice the onion and garlic, slice the mushrooms. If you use peppers and tomatoes, dice them as well.
3. In a saucepan, start to simmer the onion in a little water. When it is glassy, add the garlic and sauté briefly.
4. Add the mushrooms and sauté until they release juice and then brown a little. Add the peppers to fry a little.
5. Salt, pepper, sprinkle with red pepper, then add the cooked chickpeas.
6. Add a little water to keep it juicy, then cook it together in a couple of minutes.
7. Taste and adjust the flavors as needed.
8. Serve the mushroom stew with boiled millet and a little natural vegetable yogurt.

Stays great in the fridge for 3 days. Millet tends to absorb moisture, so when reheating, add a little water or vegetable milk to make it creamy again.
